Smoked Paprika Pork Sandwich

This recipe is nothing too fancy, but it hits the spot. I often use any leftover pork in fried rice, and it is super delicious as well.

Smoked Paprika Pork Sandwich
Makes 4-6 Sandwiches
Prep time: 10 minutes
Cook time: 15 minutes
Total time: 25 minutes
Ingredients:
- 1 lb./450 g Pork, ground or cut into strips
- 1/4 medium Onion, thinly sliced
- 3-5 Garlic Cloves, minced
- 2 T. Cooking Oil
- 1/2 T. Smoked Paprika
- 1 t. Salt
- 1/2 t. Pepper
- Sandwich Bread
- Mayonaisse (I used Kewpie Mayo)
- Pepper Jack or White Cheddar Cheese
- Spinach or other Leafy Greens
- 1 T. Butter (optional)
Instructions:
- Make the Pork: Heat a pan on medium high heat and add the cooking oil to the pan. Once hot add the sliced onion, pork, and spices. Cook for 4-5 minutes, then add the garlic and cook for another 4-5 minutes or until pork is fully cooked.
- Assemble the Sandwiches: Place mayo on a slice of sandwich bread, followed by the pork, spinach, cheese, and the other slice of bread. You can eat the sandwich as is or toast it in the next step.
- Place butter in a pan or griddle and heat the pan on medium heat. Place the sandwiches in the pan and cook 2-3 minutes each side or till golden brown.
- Enjoy! These are great served with pickled jalapeños!
Notes:
- Measurements in this recipe are very loose. Feel free to change or modify any of the ingredients.
- Cooking time will vary depending on your pork thickness. Mine was also partially frozen so I could cut it into strips easier.
- Pork can be substituted for other meats/protein, we often make this with chicken too.
