Kimchi Tofu

Kimchi Tofu is and easy, delicious, and nutritious recipe. I make this all the time for lunch. Feel free to add more kimchi if half a cup is not enough!

Kimchi Tofu

Serves 2

Prep Time: 5 minutes

Cook Time: 7 minutes

Total Time: 12 minutes

Ingredients:

  • 1/2 Block Tofu (255g), cut into bite-size squares
  • 6-8 Scallions, chopped (separate whites from greens)
  • Cooking Oil
  • 1/2 C. Kimchi, chopped
  • 1 T. Gochujang
  • 1 1/3 T. Soy Sauce
  • Cheese (opt.)

Instructions

  1. Heat a pan on medium-high heat. Once hot add a good drizzle of cooking oil, the tofu, and scallion whites. Cook till tofu is golden on both sides, about 3-5 minutes.
  2. Next add in the kimchi, gochujang, and soy sauce. Continue to cook till there is no more liquid and the gochujang is evenly incorporated, about 1-2 minutes.
  3. Place on a bed of rice, sprinkle on some cheese (opt. but I like pepper jack cheese), and garnish with the scallion greens.
  4. Enjoy!
