Alfredo Pork and Mushroom Rice Bowl

This rice bowl is so creamy and delicious, you will want to make it again and again!

How to Make It

The Rice

I use medium grain white rice for pretty much all of my rice based meals. Feel free to opt for another type of rice, such as jasmine or brown rice.

The Alfredo Sauce

This is not a traditional alfredo sauce, but it is so delicious, and easy to make that you'll want to make it again. I also cannot take credit for the sauce, as I got the recipe from an awesome family member. So kudos to them for the alfredo sauce.

The sauce is so easy to make. Just add the milk and cheeses into a pan and cook on medium heat, stirring occasionally, till you get a creamy consistency. Then add a touch of garlic salt. So easy!

While prepping your ingredients, you might think that 8 oz. of mushrooms or 2-3 handfuls of spinach seem like a lot, but just trust me on this. The mushrooms and spinach will shrink when you cook them and not seem overwhelming.

Alfredo Pork and Mushroom Rice Bowl

Serves 4

Prep Time: 10 minutes (not including rice cook time)

Cook Time: 10 minutes

Total Time: 20 minutes

Ingredients:

  • 1 1/2 C. White Rice
  • 8 oz. Baby Bella Mushrooms, sliced
  • 1-2 Shallots, sliced
  • 2-4 Garlic Cloves, minced
  • 1/2 lb. Ground Pork
  • 2-3 Handfuls of Spinach
  • Olive Oil or any Neutral Cooking Oil

Alfredo Sauce:

  • 1 Block of Cream Cheese
  • 1 C. Parmesan (not powdered)
  • 1 C. Milk
  • Garlic Salt

Instructions:

  1. Rinse the rice and cook it like you normally would.
  2. Prep your ingredients by slicing the mushrooms, shallots, mincing the garlic, and grating the parmesan if needed.
  3. In a medium sauce pan, add the cream cheese, parmesan, and milk. Cook on medium heat, stirring occasionally.
  4. While the alfredo sauce is cooking, turn a fry pan onto medium to medium-high heat, and pour in some cooking oil. Once the pan is hot, add in the mushrooms, shallot, garlic, and stir fry them for about a minute. Then add your pork and cook till brown.
  5. Throw in a couple handfuls of spinach into the pork and mushrooms, and mix until the spinach is wilted. Add salt and pepper to taste.
  6. Once the alfredo sauce is all melted and mixed, add some garlic salt to taste.
  7. Add your rice, pork mixture, and alfredo sauce into a bowl. Mix and enjoy!
